Did you ever think that nowadays – in the world of complete urbanization and modernity, people have mostly stopped cooking healthy food? It seems that everyone nowadays just buys and eats the food from supermarkets, not wanting to waste time.
But I personally, have no doubt that our loved ones will be very glad to come home, especially during the cold Autumn and Winter seasons, to find a nice smell of freshly baked cookies in the house. Or even better – to take a part in its preparation, while enjoying a lovely family chat. It definitely gives a magnetic feeling of warmness and coziness – a pure definition of home. In Ukraine, many locals still have this old tradition – to do all the cooking and baking at home.
So let me share with you one recipe for some delicious and very simple cookies, which could server as a yummy dessert for kids with a cup of milk, for a spouse, with a cup of tea or a glass of juice, or for your dear guests.
You will need the following ingredients:
For the dough:
Baking flour 500 gr
Butter 250 gr
Sugar 100 gr
3 egg yolks
Juice of ½ lemon
baking powder ½ teaspoon
Vanilla (as per your taste)
For the fudge :
Sugar 150 gr
Lemon juice 1 tablespoon
Cut walnuts 100 gr
How to make the cookies:
Rub together softened butter (room temperature) with sugar, and yolks. Then add sifted flour, baking powder, lemon juice and vanilla. Knead the dough (until it becomes soft). Place the dough onto a floured board (thickness of the dough should be approximately 5 millimeters, as it will rise a bit when baked). Then squeeze out the rings onto the board (use a clean, clear plastic bag – make a small whole in one corner, then place the dough into the bag, and squeeze). And then place the cookie rings on a baking tray, covered with a piece of parchment paper.
Whip the egg-whites until they form a white, thick foam. Then whip it gradually – add sugar and 1 table spoon of lemon juice. Put the foam into the clear plastic bag and squeez it onto each cookie as shown on the photo.
Then sprinkle with cut walnuts and put inside the oven (temperature 200 C) and bake for 15-20 minutes, until they become brown and crispy.
