Arroz con Pollo (Classic Colombian Style)

Recipe’s Ingredients:

  • half a chicken breast
  • 1 tomato
  • 1 paprika
  • 1 cup green peas and carrot diced
  • 2 cups of rice
  • 2 stalks onion branch
  • 3 tablespoons garlic powder
  • 3 tablespoons powdered food color
  • 2 cups of rice
  • ketchup
  • olive oil
  • salt to taste

Recipe’s Instructions:

Cook the chicken breast over medium heat for 30 min. Then chop it into small pieces.

Add olive oil on a large skillet to fry the vegetables (onion, tomato, and paprika) together with the chicken.  Mix until they gain color.

In a pot, boil 4 glasses of water.  Add rice and peas after the water is boiling and stir a bit.  Then wait until the excess water evaporates.

Add the stew to the rice when it still holds some of the water and mix together.

Finally cover and simmer for 15 minutes over low heat – this would ensure that the rice and the seasoning cook well.

You can also serve this recipe with French potatoes.
